Tipsy Tuesday – Mango Bellinis

I wanted to start changing things up a little. Let’s face it, I love to drink and especially play around with new cocktails so I decided I should dedicate one day a week to these new tasty creations.  Why Tuesday’s? Why not? One of the first questions that I hear people ask when they enter the Paleo scene is, “Can I drink?” Well, technically, if you are strictly Paleo then no. BUT, if you don’t want to be stressing about everything you can’t have all of the time, then I say, figure out what your body can handle and enjoy life.  I stay away from highly sugared drinks (especially with mixes) and definitely am conscious of what I drink but I still like to enjoy my wine and a cocktail now and then.

The first cocktail I decided to blog about is one that is SUPER easy and made with a fruit that is currently in season – MANGOS! Bellinis can be made with any soft fruit, but taste the best when the fruit is in season and at it’s ripest. Mangoes help with indigestion problems and aid in the ease of digestion. They are high in vitamins C, A & E and iron.  THey contain a high amount of antioxidants and are used to help improve memory in children.

The Good Stuff:

  • 1 large mango
  • 1-2 bottles of champagne (this is determined by how fruity you like your bellinis)

The How To:

  • Peel and pit the mango and place the meat in a food processor and process until smooth.
  • Scrape bowl and place in a pitcher.
  • Pour in champagne, stir and serve.
