Tipsy Tuesday – Holding On To Summer

I’ve been a little radio silent on the blog lately… We were in the process of moving the blog name over to More Than Paleo which I’m super stoked about and ended up dealing with some glitches in the process. Then all of a sudden I just completely fell behind. You know those times… when you have the best intentions and you think you have a well laid plan then some how Lenny gets in the way and the next thing you know you are about a week behind on everything! Oh well, so is life!

I have been continuing to dabble in cocktails for the Kapow weekend cocktail specials and am loving some of my latest creations. The day I came up with this one I was thinking about how fast summer was slipping by and decided to create a cocktail that would get the last sips of summer out before it was completely gone.  With watermelon being the main stay in this drink, you may find it especially appealing since those big lugs are on sale now in all the stores. This drink is slightly sweet and very refreshing! I can see it being a huge hit as a punch at a party!

To begin you’ll need some watermelon juice. I just toss the meat of a watermelon in a food processor and process until liquid. You may get a few leftover chunks in your juice but they just add to the drink. I don’t worry about straining it.

The Good Stuff:

  • 2 slices Cucumber
  • 3-4 Mint Leaves
  • Lime Wedge squeeze
  • 2 oz Watermelon Juice
  • 1/4 oz Honey Syrup
  • 1/4 oz St Germaine
  • 1.5 oz Herradura Reposado Tequila
  • Watermelon Wedge (for garnish)
  • Soda Water
  • Rocks Glass
  • Ice
  • Shaker Tin
  • Muddler

The How To:

  1. In a shaker tin combine cucumbers, mint, and squeeze from lime wedge and muddle.
  2. To shaker add watermelon juice, honey simple syrup, st germaine, tequila, and ice and shake.
  3. Put ice in rocks glass and strain shaker over ice.
  4. Garnish with a watermelon wedge.
