Paleo Banana Bread

So for all of you who have been asking, here is my yummy banana bread recipe. I LOVE LOVE LOVE this recipe.  I wish I could eat it every week!  For me, I try to limit my fruits so I make this one as a treat or for the holidays as a gift for others. And for those who don’t follow Paleo, you can’t even tell that this bread doesn’t contain any grains.  Enjoy!

THE IMPORTANT STUFF

  • 3 over ripe bananas
  • 2 eggs
  • 1 cup almond butter
  • 1 tablespoon vanilla
  • 1 cup almond flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 2 teaspoons cinnamon
  • 1 teaspoon nutmeg
  • 1/3 cup chopped walnuts
  • 1/2 dark chocolate bar

THE HOW TO

  • Preheat oven to 350 degrees.
  • Mash bananas.
  • Combine bananas, eggs, almond butter and vanilla in a mixing bowl.  Mix until well blended.
  • In a separate bowl combine almond flour, baking soda, baking powder, cinnamon, and nutmeg and stir.
  • Slowly add the dry ingredients into the bowl and mix all together.
  • Chop up the 1/2 of the dark chocolate bowl and set some aside to sprinkle over the top of the loaf.
  • Stir in chocolate and walnuts into the batter.
  • Line loaf pan with parchment paper and pour batter into the lined loaf pan.
  • Sprinkle remaining remaining chocolate on top.
  • Bake for 35 minutes. Test the loaf by sticking a toothpick into it. Extend the baking time if it doesn’t come out clean.
  • Slowly pull out of oven and let set until cool so that the loaf doesn’t drop.

    Hi,
    This banana bread was pretty good. The nutmeg was a bit much. I would recommend putting in half as much or none at all.
