I woke up this morning to the Today Show FINALLY touting some good nutritional advice for a change, no thanks to Joy Bauer! Anyone who knows me knows I can’t stand her “nutritional guidance” which is pro-factory, pro-governmental dietary training, pro-latest fad and absolutely NO real conversations about how food is affecting us through this horrible Standard American Diet that everyone is following. She is on a platform as the Today Show Nutritionist and has the ability to influence many. Instead, she has turned into a talking head just repeating the latest trend instead of challenging the status quo. 90% of the advice she gives is HORRIBLE and misguided! In fact, last week alone she was talking about how everyone should be on a low-fat diet and this morning I woke up to her speaking the truths stated on the cover of Time magazine that saturated fat is GOOD for you.
Thanks to the cover of Time magazine, saturated fat is the center of conversation. America has waged a WAR on fat for the past 40 years yet we are getting sicker and sicker as a nation. Finally we are waking up to the fact that low fat is NOT the answer. In fact, in part, the low-fat campaign is what got us to this sickly state we are in. The Time article talks about the state of our health since this campaign started:
We cut the fat, but by almost every measure, Americans are sicker than ever. The prevalence of Type 2 diabetes increased 166% from 1980 to 2012. Nearly 1 in 10 American adults has the disease, costing the health care system $245 billion a year, and an estimated 86 million people are prediabetic.
It seems our health as a nation had to become an epidemic before we started to question the advice we’ve been told for the past couple decades. When the low-fat campaign hit the market (backed by horribly faulty research), food companies saw a HUGE opportunity to start creating and marketing low fat foods in such a way that the public literally started gobbling them up. Unfortunately these foods have been packed full of sweeteners, oils, and chemicals. All things that lead to obesity and illness. People are getting sicker and our economy, work force, health care system and the family unit is suffering. There are more illnesses, more mental problems, higher disease, increased numbers of miscarriages plaguing us. And you don’t need any studies to tell us this. Simply turn on the news to the latest shooting that is now happening on a weekly basis. Look around you at an extremely obese population. Watch the commercials that are plagued with the latest medicine cure. Or simply count on your hand the number of people you know who have died from cancer… heart disease… neurological disorders… WE ARE SICK!!!! AND IT’S NOT GETTING BETTER!!! And the most astounding in our face part of all of this, which we seem not to be addressing, is these problems didn’t exist, at least not even close to the amount they do today, BEFORE we started waging these wars on food and changing our food system! What the Hell is wrong with us that we can’t see that we’ve screwed up our own food system?
Well, there may be hope on the horizon. More blogs, posts, and articles are popping up ever day about getting back to real food. And one of the biggest influencers, I believe, is going to be bringing QUALITY saturated fats back in to our diet and getting off of this low-fat starvation diet that everyone has been on. We have to shift the way we are eating. The Time magazine article goes on to say:
Now it’s becoming clear that even the saturated fat found in a medium-rare steak or a slab of butter–public-health enemies Nos. 1 and 2–has a more complex and, in some cases, benign effect on the body than previously thought. Our demonization of fat may have backfired in ways we are just beginning to understand.
And now they are stating carbohydrates, sweeteners, and sugars are the culprits behind our sick epidemic. What many people don’t understand is that although carbohydrates seem harmless, they actually do more to build up fat in our bodies then consuming fat actually does. This is due to how carbohydrates our assimilated. Carbs turn to sugar (glucose) in our system which places our pancreas into overdrive to secrete insulin in order to lower and balance our blood sugar levels. This in turn causes us to store the excess glucose as fat. That’s the simple version. The overworking of our pancreas can lead to diabetes and too much carb consumption can lead to obesity.
But there is so much more to this issue and is something we really need to start talking about. And that is FOOD QUALITY! Yes, consuming more saturated fats and lowering our consumption of dense carbohydrates such as bread, pasta, and crackers is definitely a step in the right direction. But if we are consuming fat from sick animals, we are doing ourselves no benefit. Concentrated Animal Feeding Operations (CAFO), also known as factory conventional farms, grow sick animals. They are pumped full of antibiotics to help them get fat, pumped full of hormones to produce milk in higher quantities, fed unnatural feed that they would not choose to eat if they had the choice and changes their fat content, living in stressed environments which change their hormones and in turn meat structure AND THEN… (breathe)… are fed to US!
Sick cows contain sick fat. When animals are fed feed that they are not used to such as soybean meal to cows, their fat structure changes. Instead of their fat containing high amount of anti-inflammatory omega-3 fatty acids, they now contain extremely high amounts of inflammation causing omega-6 fatty acids. Food quality is of utmost importance!
WHAT SATURATED FATS ARE OK (AND BENEFICIAL) TO EAT:
- Full fat, grass fed dairy (raw if you can get it) – milk, cheese, yoghurt, kefir, etc.
- Fat from grass fed, grass finished beef (Tallow)
- Chicken skins from pastured chickens
- Egg Yolks from pastured chickens
- Pork Fat (Lard) from pastured, uncaged pigs
It is going to be a long battle to change the public opinion of saturated fats but with more media attention and food companies getting on board with healthy full fat campaigns, it will happen. The proof is in the full fat, grass fed dairy pudding. There is hope. We can turn the health of the nation around and we need to do it by questioning the status quo getting back to REAL food while consuming meat from traditional farms. The way we used to. And Joy Bauer… you can keep you low fat, carbohydrate driven recipes to yourself.. I’ll be watching to see if those change anytime soon.
